I am going to start off by saying that I have subscribed to Bon Appetit for about 2 years now, and I have never made any BA recipe that wasn't down-right delicious.  My daughter loves to experiment with new recipes, so the past weekend when we had family in town, we decided to make this "special sauce". 

 

Special is an understatement.

 

It was so delicious that we were fantisizing about other food to put it on while we were eating; fish tacos, tater tots, chicken wings, shrimp.  Use it as a salad dressing.  Or a chip/veggie dip, or make cole slaw with it.  We were licking it off our fingers; using hamburger buns to soak up the last little remnants of it off our plates.   Yes, it is THAT good.   You can turn up the heat a little by adding one of the chipotles from the can of chipotles in adobo.  

 

My only other advice is to make a double batch!

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon finely grated onion
  • 1 tablespoon sweet relish or 1 tablespoon dill pickle relish
  • 2 teaspoons adobo sauce from canned chipotle chiles in adobo
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon kosher salt

    Canned chipotle chiles in adobo are available at better supermarkets and at specialty foods stores and Latin markets.

Preparation

  • Combine ingredients in a medium bowl and serve with burgers. Earn bonus points by bringing a jar to the next cookout.
